For the Stir-Fry:
1 lb (450 g) shrimp, peeled and deveined
2 tablespoons vegetable oil (divided)
1 red bell pepper, sliced
1 cup broccoli florets
1 cup snap peas (or snow peas)
1 small carrot, thinly sliced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
Salt and black pepper, to taste
For the Sauce:
3 tablespoons soy sauce
2 tablespoons honey (or brown sugar)
1 tablespoon rice vinegar (or lime juice)
1 tablespoon cornstarch
¼ cup water
1 teaspoon sesame oil (optional for flavor)
For Serving:
Cooked rice or noodles
Sesame seeds and chopped green onions for garnish

Make the Sauce:
In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, water, and sesame oil. Set aside.Cook the Shrimp:
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add shrimp, season lightly with salt and pepper, and cook for 2–3 minutes per side until pink and opaque. Remove shrimp from the pan and set aside.Stir-Fry the Vegetables:
Add the remaining oil to the pan. Toss in broccoli, bell pepper, carrots, and snap peas. Stir-fry for 3–4 minutes until crisp-tender. Add garlic and ginger, cooking for another 30 seconds until fragrant.Combine Everything:
Return shrimp to the pan, pour in the sauce, and toss well. Cook for 1–2 minutes until the sauce thickens and coats everything beautifully.Serve:
Spoon over rice or noodles, garnish with sesame seeds and green onions, and enjoy a vibrant, tasty meal!
