Salted Honey Pie Bites 🍯

Ingredients

For the Crust:

  • 1 1/4 cups all-purpose flour

  • 1/2 cup cold vegan butter (or regular butter if not vegan), cubed

  • 1–2 tablespoon cold water

  • 1 tablespoon sugar

  • Pinch of salt

(Shortcut: you can also use store-bought pie dough for convenience!)

For the Filling:

  • 1/3 cup coconut cream or heavy cream

  • 1/4 cup coconut oil or butter, melted

  • 1/2 cup pure honey or maple syrup (for vegan version)

  • 1/4 cup brown sugar

  • 2 teaspoon vanilla extract

  • 2 tablespoon cornstarch (to thicken)

  • 1/4 teaspoon salt

For Topping:

  • Flaky sea salt

  • Optional: drizzle of extra honey or maple syrup

Directions

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).

    • Grease a mini muffin tin or line with mini cupcake liners.

  2. Make the Crust:

    • In a bowl, combine flour, sugar, and salt.

    • Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.

    • Add cold water, 1 tablespoon at a time, until the dough just comes together.

    • Roll out the dough and cut into small circles to fit your mini muffin tin.

    • Press each circle gently into the cups to form little pie shells.

  3. Prepare the Filling:

    • In a saucepan over low heat, whisk together honey (or maple syrup), coconut cream, melted coconut oil, brown sugar, vanilla, cornstarch, and salt.

    • Cook for 3–4 minutes, stirring constantly until slightly thickened. Remove from heat.

  4. Fill the Shells:

    • Spoon the honey filling evenly into each crust cup, about 2/3 full.

    • Tap the tin lightly on the counter to smooth out the tops.

  5. Bake:

    • Bake for 20–25 minutes, until the crust is golden and the filling is bubbly and set around the edges.

    • Let cool in the pan for 10 minutes, then transfer to a wire rack.

  6. Finish & Serve:

    • Sprinkle each bite with flaky sea salt while still slightly warm.

    • (Optional) Drizzle a touch of honey or maple syrup over the tops for extra shine and sweetness.

    • Serve warm or at room temperature — they’re heavenly either way!
