Shrimp Scampi Recipe

Ingredients

  • 1 lb (450 g) large shrimp, peeled and deveined

  • 3 tablespoon unsalted butter

  • 2 tablespoon olive oil

  • 4 cloves garlic, minced

  • ½ tsp red pepper flakes (optional, for heat)

  • ½ cup dry white wine (or chicken broth)

  • Juice of 1 lemon (about 2 tablespoon)

  • ¼ cup fresh parsley, chopped

  • Salt and freshly ground black pepper, to taste

  • Cooked pasta or crusty bread, for serving

Directions

  1. Prepare the shrimp: Pat shrimp dry with paper towels and season lightly with salt and pepper.

  2. Heat the pan: In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat until melted.

  3. Sauté garlic: Add the minced garlic and red pepper flakes. Cook for 30–45 seconds, stirring constantly, until fragrant (don’t burn the garlic!).

  4. Cook shrimp: Add shrimp to the pan in a single layer. Cook for 1–2 minutes per side until pink and opaque. Remove shrimp and set aside.

  5. Deglaze the pan: Pour in the white wine (or broth) and lemon juice. Scrape up any bits from the bottom of the pan and simmer for 2–3 minutes to reduce slightly.

  6. Finish the sauce: Stir in the remaining tablespoon of butter until melted and glossy.

  7. Combine: Return shrimp to the pan, toss to coat in the sauce, and cook for another 1–2 minutes.

  8. Serve: Sprinkle with fresh parsley and adjust seasoning with salt and pepper. Serve immediately over pasta or with crusty bread to soak up the sauce.
